Chef Shigeki IImura's Japanese Serenade Menu at Buddha Bar Manila.


You might have seen this event in my Instagram stories two Saturdays ago.. Chef Shigeki Iimura performing a live demo of his special Japanese Serenade menu in Buddha Bar Manila.



Buddha Bar is a lounge and restaurant which first opened in Paris, France in 1996.  Later, the chain expanded to major cities such as London, Dubai, Monte Carlo, Prague, and Moscow and Manila.


Chef Shigeki visits Manila once a year and T and I were invited to meet him.  While waiting, T ordered a Scotch while I tried the Manila Red Sunset (PhP630+) cocktail which has red wine, crème de cassis, lime juice, orange juice, sugar syrup, and Coke.  As you can see it's very big and is good for sharing.


We enjoyed our drinks while being serenaded by a violinist who played renditions of love songs and contemporary music.


A little bit of background about Chef Shigeki.. He grew up in Tokyo where his family owned a popular Japanese restaurant.  As a child, his parents taught him only to select the highest quality seafood and freshest ingredients at Tokyo's Tsukiji market.  T and I learned a few tricks of the trade from Chef Shigeki that night such as dipping hands in iced water before rolling makis so the rice won't stick to it and cutting rolls in the middle moving outward to make the perfect maki.






For the evening, Chef Shigeki prepared the following dishes:
Appetizers - Ahi Tuna Poke, Buddha Bar-Style Salmon Sashimi with Truffle Swee rand Sour Teri Dare Sauce, and Prawn & Salmon Ceviche with Green Chili Sauce.  



Sushi Rolls - Crunchy and Spicy Tuna Roll, Grilled Prawn Volcano Roll, and Contemporary Philadelphia Roll.

Mains - Grilled Salmon with Ginger-Lemongrass Teriyaki served with Yaki Onigiri, Godzilla Fish with Deep Fried Noodles and Vegetables, Robata Grilled Black Miso Chicken, and Braised Pork Ribs “Buta Kakuni” and White Radish Pot au Feu.



Dessert - Matcha Green Tea Fruit Tart Sweet and Sushi Roll Fruit Ceviche.


The special Japanese Serenade Menu will be available in Buddha Bar Manila only until this Sunday, July 23.  So try to visit anytime this week and try Chef Shigeki's special creations.
